Buffalo Sausage Cornbread Bake

Buffalo Sausage Cornbread Bake Recipe

Ingredients:

  • 1lb buffalo sausage, casings removed
  • 1 onion, finely diced
  • 3 cups Abenaki cornmeal
  • 1 cup flour
  • ⅔ cup sugar
  • 1 tsp salt
  • 2tbsp + 2tsp baking powder
  • 2 eggs
  • 2 cups buttermilk
  • ½ cup oil
  • ½ cup maple syrup
  • 1 cup shredded cheddar cheese
  • ½ tsp smoked paprika
  • ½ tsp garlic powder

Instructions:

  1. Preheat oven to 375F. Grease a 9x13 baking dish.
  2. Cook sausage (casings removed) and onion until cooked through and browned. Drain grease, cool slightly.
  3. In a large bowl, combine cornmeal, flour, sugar, salt, & baking powder. In a separate bowl, combine eggs, buttermilk, oil and syrup. Add wet ingredients to the dry ingredients, do not over mix. Fold in sausage, onions, cheese and additional spices.
  4. Bake for approximately 30 minutes or until a toothpick comes out of the middle clean. Serve warm with maple butter. Enjoy!

Ingredients for Maple Butter:

  • ¼ cup butter, softened
  • 2-3 tbsp maple syrup

Instructions for Maple Butter:

  • Mix together until smooth and creamy. Top cornbread with a generous smear!
