Buffalo Sausage Cornbread Bake Recipe
Ingredients:
- 1lb buffalo sausage, casings removed
- 1 onion, finely diced
- 3 cups Abenaki cornmeal
- 1 cup flour
- ⅔ cup sugar
- 1 tsp salt
- 2tbsp + 2tsp baking powder
- 2 eggs
- 2 cups buttermilk
- ½ cup oil
- ½ cup maple syrup
- 1 cup shredded cheddar cheese
- ½ tsp smoked paprika
- ½ tsp garlic powder
Instructions:
- Preheat oven to 375F. Grease a 9x13 baking dish.
- Cook sausage (casings removed) and onion until cooked through and browned. Drain grease, cool slightly.
- In a large bowl, combine cornmeal, flour, sugar, salt, & baking powder. In a separate bowl, combine eggs, buttermilk, oil and syrup. Add wet ingredients to the dry ingredients, do not over mix. Fold in sausage, onions, cheese and additional spices.
- Bake for approximately 30 minutes or until a toothpick comes out of the middle clean. Serve warm with maple butter. Enjoy!
Ingredients for Maple Butter:
- ¼ cup butter, softened
- 2-3 tbsp maple syrup
Instructions for Maple Butter:
- Mix together until smooth and creamy. Top cornbread with a generous smear!
