Maple Chipotle BBQ Bites

Sweet, smoky, and just a little bit spicy โ€” these Maple Chipotle BBQ Bites take your favorite beef or bison roast to a whole new level of flavor.

This recipe brings together two local favorites: rich, slow-cooked farm-raised beef or bison and pure New Hampshire maple syrup. The result is tender, bite-sized pieces coated in a homemade BBQ sauce that balances sweet maple with the perfect hint of smoky chipotle heat. Whether youโ€™re hosting friends, planning game-day snacks, or just looking for a bold new way to enjoy a roast, these bites are guaranteed to disappear fast.

Ingredients:

  • 1 beef or buffalo chuck or round roast, approx. 2-3#
  • 1.5 cup broth or water
  • 1/4 cup apple cider vinegar
  • 2 tbsp tomato paste or ketchup
  • 1/4 cup maple syrup
  • 1 tsp chipotle powder
  • Salt and pepper to taste
  • 1-2 tbsp bacon grease or other cooking oil

Instructions:

Season roast on all sides with salt and pepper. If using Instant Pot: Add roast & broth to Instant Pot and pressure cook for 1 hour. If using oven: Preheat to 350, and add roast and broth to Dutch oven. Cover, and cook for 3-4 hours or until fork tender.

Meanwhile, make the BBQ sauce - add vinegar, tomato paste, maple syrup, and spices to pot. Stir to combine, and cook for 10-15 minutes on medium, or until slightly reduced.

When the roast is cooked, allow to cool and cut into bite sized pieces.

Heat grease in a large skillet or pan. Working in batches to ensure that the bites have enough room to brown, quickly cook the bites on high heat, just until they start to brown. Then, remove and cover with BBQ sauce.
