The tenderloin is known for being the most tender cut of beef, and our grass-fed process enhances this natural characteristic, providing a steak that is both lean and succulent. To preserve the delicate texture and flavor of our beef tenderloin steaks, we recommend cooking them to no more than medium-rare. Allow the steaks to reach room temperature before seasoning them with salt and pepper. Sear in a hot, lightly oiled skillet or grill over high heat for a few minutes on each side, then let them rest for several minutes before serving to ensure juiciness and flavor.

  1. Prepare the Steaks: Remove the tenderloin steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This ensures even cooking.

  2. Season: Pat the steaks dry with paper towels to remove any excess moisture. Season both sides generously with salt and freshly ground black pepper. For added flavor, you can also use herbs or a spice rub of your choice.

  3. Preheat the Pan: Heat a heavy skillet (preferably cast iron) over medium-high heat until it is hot. For grilling, preheat your grill to high. Whether pan-searing or grilling, a high initial heat is crucial for creating a flavorful sear.

  4. Cook: Add a pad of butter, or a small amount of high-smoke-point oil (such as avocado or grapeseed oil) to the skillet, or brush the grill grates with oil to prevent sticking. Place the steaks in the pan or on the grill. Cook for about 2-3 minutes on one side, then flip and cook for another 2-3 minutes for medium-rare, depending on the thickness of the steaks. Grass-fed beef cooks faster than grain-fed, so keep a close eye on it.

  5. Check for Doneness: Use a meat thermometer to ensure accuracy; 125-130°F (52-54°C) for medium-rare. Avoid overcooking to maintain tenderness.

  6. Rest the Steaks: Transfer the steaks to a plate and cover loosely with foil. Let them rest for 5-10 minutes to allow juices to redistribute throughout the meat, ensuring a moist and tender steak.
