Our cattle are raised in a stress-free environment, allowed to roam freely and live naturally. This not only enhances their quality of life but also the quality and flavor of the beef itself. 

  1. Preparation: Remove the beef roast from the refrigerator at least 30 minutes before cooking to allow it to come to room temperature. This helps in achieving even cooking.

  2. Seasoning: Pat the roast dry with paper towels. Season generously with salt and pepper all around. You can also rub the roast with a mixture of garlic, herbs (like rosemary or thyme), and olive oil for added flavor.

  3. Preheat Oven: Preheat your oven to 325°F (165°C). Cooking at a lower temperature is key for grass-fed beef, as it's leaner than grain-fed beef and can dry out if cooked too quickly.

  4. Sear (Optional): For added flavor, sear the roast in a hot skillet on all sides until browned. This step is optional but adds a rich flavor to the finished roast.

  5. Roasting: Place the roast in a roasting pan. Insert a meat thermometer into the thickest part of the roast. Roast in the preheated oven until the thermometer reads the desired doneness: 120-125°F for rare, 130-135°F for medium-rare, and so on. Remember, grass-fed beef will cook faster than traditional grain-fed beef.

  6. Resting: Once the roast reaches your preferred level of doneness, remove it from the oven and let it rest on a cutting board, tented with aluminum foil, for at least 15-20 minutes. Resting allows the juices to redistribute throughout the meat, making it more tender and flavorful when sliced.

  7. Slicing: Slice against the grain into thin or thick slices, according to preference.

  8. Serving: Serve warm with your choice of side dishes like roasted vegetables, mashed potatoes, or a fresh salad.
