Our grass-fed beef Osso Buco is for slow cooking, which tenderizes the meat and enriches the flavors. Braised with a mixture of vegetables, white wine, and broth, it transforms into a succulent, fall-off-the-bone dish that's both hearty and comforting. The key to its preparation lies in its low and slow cooking process, allowing the flavors to meld together beautifully, resulting in a dish that's both sophisticated and deeply satisfying.

  1. Season and Sear: Begin by seasoning the Osso Buco (beef shanks) generously with salt and pepper. Heat a heavy, oven-proof pot or Dutch oven over medium-high heat with a bit of olive oil. Sear the shanks on all sides until they are nicely browned. This step is crucial for developing deep flavors.

  2. Sauté Vegetables: Remove the shanks and set aside. In the same pot, add chopped onions, carrots, and celery (mirepoix). Sauté until the vegetables are softened and slightly browned. You can also add minced garlic in the last minute of sautéing for added aroma.

  3. Deglaze and Simmer: Add a splash of dry white wine to deglaze the pot, scraping up the browned bits from the bottom. Once the wine has reduced by half, return the shanks to the pot. Add enough beef broth to nearly cover the meat, along with a can of diced tomatoes, a bay leaf, and fresh thyme.

  4. Braise: Bring the liquid to a simmer, then cover the pot and transfer it to a preheated oven at 325°F (163°C). Braise for about 2 to 3 hours, or until the meat is very tender and almost falling off the bone.

  5. Final Touches: Once the meat is tender, you can remove the shanks and strain the cooking liquid, skimming off excess fat. Reduce the strained liquid over medium heat until it thickens into a rich sauce. Season with salt and pepper to taste.

  6. Serve: Serve the Osso Buco with the sauce spooned over the top. Traditional accompaniments include risotto alla milanese or creamy polenta, which complement the rich flavors of the dish beautifully.
