100% Grass-fed beef brisket, cut into points or flats

Our grass-fed beef brisket shines whether you're smoking, braising, or roasting. This method tenderizes the meat, allowing it to absorb the flavors of your chosen seasonings and cooking liquids. For a beautifully tender and flavorful brisket, we recommend giving the connective tissues time to break down and the fat to render, creating an incredibly moist and flavorful dish.

  1. Preparation: Begin by trimming any excess fat from the brisket to about ¼ inch thickness. This fat cap will help keep the meat moist during the long cooking process.

  2. Seasoning: Generously season the brisket on all sides with your choice of rub. A basic rub might include salt, black pepper, garlic powder, and paprika. For more complex flavors, you can incorporate brown sugar, cumin, and dried herbs.

  3. Refrigeration: For best results, let the seasoned brisket refrigerate overnight. This step allows the flavors to penetrate the meat.

  4. Preheat: Preheat your oven, smoker, or grill to a low temperature — around 225-250°F (107-121°C). Low and slow is the key to tenderizing the brisket's tough connective tissues.

  5. Cooking:

    • Oven: Place the brisket fat side up in a roasting pan, cover tightly with foil, and cook in the preheated oven.
    • Smoker/Grill: For smoking, maintain a consistent temperature and use indirect heat. Add wood chips for smoke flavor if desired. Cook until the brisket reaches an internal temperature of about 195-205°F (90-96°C), typically taking about 1-1.5 hours per pound of meat.
  6. Resting: This step is crucial. Once cooked, remove the brisket from the heat source and let it rest for at least 30 minutes before slicing. Resting allows the juices to redistribute throughout the meat, ensuring it's moist and flavorful.

  7. Slicing: Slice the brisket against the grain into thin slices to ensure tenderness.
