Cooking grass-fed beef back ribs to perfection requires a slow and low approach to maximize their tenderness and flavor. Here's a brief overview:
-
Preparation: Begin by removing the membrane from the back of the ribs, if present, for better flavor absorption and tenderness. Pat the ribs dry with paper towels.
-
Seasoning: Rub the ribs generously with your choice of seasoning. A simple mix of salt, pepper, garlic powder, and smoked paprika can be used, or you can apply your favorite barbecue rub for more complex flavors.
-
Oven Method:
- Preheat your oven to 275°F (135°C).
- Wrap the seasoned ribs in aluminum foil or place them in a covered roasting pan to help retain moisture.
- Bake in the preheated oven for about 2.5 to 3 hours, or until the meat is tender and pulls away from the bone easily.
-
Grill/Smoker Method:
- Preheat your grill or smoker to a low temperature, around 225°F to 250°F (107°C to 121°C).
- Place the ribs bone-side down, away from the direct heat. If using a grill, maintain low, indirect heat.
- Cook slowly, covering the grill or smoker, for about 3 to 4 hours. If desired, you can baste the ribs with a sauce in the last hour of cooking to add flavor and moisture.
-
Resting: Regardless of the method, let the ribs rest for about 10-15 minutes after cooking before cutting into them. This allows the juices to redistribute, ensuring the meat is moist and tender.
-
Serving: Serve the ribs with additional barbecue sauce on the side if desired, and enjoy!
Remember, grass-fed beef tends to cook a bit differently than grain-fed due to its leaner nature, so monitoring the ribs towards the end of cooking time is key to achieving perfect tenderness.
