Buffalo Brisket

Weight: Average 5-6 lbs

Discover the rich, savory flavor of our premium Buffalo Brisket! Locally raised and pasture-fed on our New Hampshire farm, this flavorful cut of bison is perfect for slow cooking, smoking, and braising. With a distinctive taste and naturally lean profile, Buffalo Brisket offers a delicious alternative to traditional beef brisket.

Cut from the breast section of the buffalo, brisket is a hardworking muscle with connective tissue that gradually breaks down during slow cooking. With the right preparation, it transforms into a tender, flavorful centerpiece for family dinners, backyard barbecues, and special gatherings.

Why Choose Our Buffalo Brisket?

  • Locally Raised Bison: Our buffalo are pasture-raised on our New Hampshire farm, with plenty of room to graze naturally.
  • Rich, Distinctive Flavor: Enjoy the robust, slightly sweet taste of bison in a classic barbecue favorite.
  • Naturally Lean: Buffalo brisket is generally leaner than traditional beef brisket while delivering satisfying flavor.
  • Protein-Rich: Bison provides high-quality protein, iron, zinc, and essential B vitamins.
  • Perfect for Slow Cooking: Excellent for smoking, oven roasting, braising, or preparing in a slow cooker.
  • Versatile: Delicious sliced for dinner, shredded for sandwiches, or added to hearty soups and stews.

Cooking Buffalo Brisket

Buffalo Brisket is best prepared low and slow. Because bison is naturally lean, maintaining moisture during cooking is especially important for achieving tender, flavorful results.

Smoking

Season the brisket with your favorite dry rub and smoke at approximately 225–250°F. Consider wrapping the brisket partway through cooking to help retain moisture. Continue cooking until the connective tissue softens and the meat is probe-tender.

Oven Braising

Season and brown the brisket, then place it in a covered roasting pan or Dutch oven with broth, onions, garlic, and your favorite herbs. Cook at approximately 275–300°F until fork-tender. The covered cooking environment helps prevent the lean meat from drying out.

Slow Cooker

Place the brisket in a slow cooker with broth, vegetables, and seasonings. Cook on low until the meat becomes tender enough to slice or shred easily.

Serving Suggestions

  • Slice thinly against the grain and serve with roasted potatoes and seasonal vegetables.
  • Shred and toss with your favorite barbecue sauce for delicious brisket sandwiches.
  • Serve with coleslaw, baked beans, or cornbread for a classic barbecue meal.
  • Use leftovers in tacos, chili, soups, or hearty breakfast hash.

Cooking Tip: Buffalo brisket contains less fat than many beef briskets, so avoid excessive heat and prolonged uncovered cooking. Use a meat thermometer to monitor progress, and allow the brisket to rest before slicing. Always slice against the grain for the most tender results.

Whether you're firing up the smoker or preparing a comforting slow-cooked family meal, our pasture-raised Buffalo Brisket brings exceptional flavor and versatility to your table.
